Waffle BLT with Basil

WAFFLE BLT WITH BASIL

INGREDIENTS

1/2 cup basil leaves, loose packed, finely slivered
Enough of your favorite waffle or pancake mix to make 6 square waffles
1 pound of bacon
2 large meaty ripe tomatoes
Lettuce of choice
Mayo or Yogurt
Optional: Make a pesto-like waffle by adding some dried or fresh garlic and a tablespoon of ground pine (or other type of nut) nuts to waffle batter.

 

 


DIRECTIONS

The closest many folks get to making fresh baked bread is Sunday waffles or pancakes.  Once you think of these two traditional treats as ‘bread' the possibilities of making savory waffles or pancakes is limited only to your imagination.  Serves 6.

 

 Fry up bacon to crisp state, drain and let cool.
 Prepare waffle batter according to package directions, folding in basil leaves.  Make waffles and set aside.
 Slice tomatoes.  Rinse, dry and tear lettuce to desired size.
 Make triangle sandwiches by cutting each waffle on diagonal.  Spread each side with mayo or yogurt, assemble sandwich, serve and enjoy.
