Salmon Salad ala Ceviche

SALMON SALAD ALA CEVICHE

INGREDIENTS


1 6 oz. can salmon, drained
1/4 cup fresh citrus juice (lemon/lime/grapefruit/orange)**


A few finely chopped olives
1 Tablespoon cilantro, slivered
1 Tablespoon onion or chives, minced
1 Tablespoon choice of other herb (thyme, basil, rosemary), slivered
2 Tablespoon olive oil
2 tablespoon each of chopped tomato and pepper (hot or sweet)

 


 


 


 


 

 DIRECTIONS

Place salmon in bowl and pour the citrus juice over and let sit for 20 minutes. Lightly drain salmon (don't press out all the juice) and add:
2 tablespoon each of chopped tomato and pepper (hot or sweet)

Salt and pepper to taste
 Mix well.  Use as sandwich spread, with crackers or as a dip with chips.


 ** Try experimenting with the orange juice, which will impart a sweetness to the salmon.
 This is very pretty served in cucumber cups (1 inch sections of cucumber with half of the center scooped out with spoon).
