Why roast? During roasting, the garlic loses some of its hardier flavor, gaining a mild, nutty garlic flavor. Can be spread on toasted bread, with a touch of olive oil; used to make a garlic salad dressing; added to pestos and used mostly whole in an olive oil and herb toss with pasta.
Although this easy recipe has been around for a long time, some folks are new to the idea of roasting garlic or think it is involved. This can be done on the grill, or in an oven. Toss a couple of heads on the grill or in the oven, to take advantage of other oven baking or grilling.
With a sharp knife cut horizontally through the head just to expose the top of each clove. Brush or drizzle with olive oil. Roast at 375-425 degrees or on indirect heat on the grill. Slow roasting creates a more carmel color and tenderer garlic condiment. Do not burn. |
