RASPBERRY VINEGAR (SHRUB) BEVERAGE

INGREDIENTS


1 cup raspberry vinegar
1 cup sugar
Chilled sparkling or still water, seltzer or club soda
3 sprigs of fresh dark opal basil, spearmint, or rose-scented geranium (or 1 sprig of rosemary)

DIRECTIONS


Vinegar as a beverage? Think lemonade! An old fashioned beverage enjoyed in
England or Scotland, this lovely recipe makes a sweet/tangy, fruity, and refreshing beverage.

Make an infused syrup—in a non-reactive pot (glass or stainless steel), bring vinegar, sugar, and herb to a simmer, stirring to dissolve sugar.  Steep for 5-10 minutes. Strain and chill syrup.
Mix 1/4 cup of syrup with 3/4 cup of sparking or still water. Enjoy!
Adult Version: Mix 1 ounce of syrup with 1 ounce of vodka or white wine, pour into 8 ounce glass filled with ice.  Add chilled seltzer to top of glass.  Add small piece of herb for garnish.
