MARINATED ARTICHOKE HEARTS

INGREDIENTS

2 packages (14 oz.) Frozen artichoke heart quarters
1 orange, zested and juiced
1 lemon, zested and juiced
1/2 cup minced mix fresh herbs (thyme, marjoram, rosemary, basil, sage, parsley)
1/2 inch slice of fresh ginger, peeled and slivered
1/2 teaspoon salt
Olive Oil
Optional: 14 ounces of drained and pitted kalamata olives (reduce salt to 1/4 teaspoon if using olives).

DIRECTIONS

Who doesn't love artichoke hearts?  And they are number 7 on the top 20 antioxidant list- -great tasting and good for you too! Can't be beat.

Cook/steam artichoke hearts according to package direction. Drain and cool. Mix herbs, citrus zest, ginger and juice and toss with artichoke hearts. Let sit for 1 hour to allow flavors to marry.  Toss mixture with salt.  Add olive oil to just cover.
