INGREDIENTS
1 pound of lean ground beef (or turkey or mix meats up if desired)
1 small potato
1/4 cup mixed finely chopped fresh herbs (basil, oregano, thyme, rosemary, parsley, or go Asian with cilantro, ginger, lemon grass (bulb part only) and very small chili pepper--choose your heat carefully.
Cracked black pepper to taste
Salt if desired at the table

DIRECTIONS
My darling introduced me to using a potato to moisten up burgers - works for meat loaf also - the herb addition is mine of course.
Shred potato skin and all and mix with herbs into the meat, folding in, but do not over mix. Shape each patty to desired size and sprinkle very lightly with black pepper. Grill to desired doneness. Grilling tip: Place patty on oiled hot grate and wait, at least 3-4 minutes, before turning. The burger is less likely to stick.
