Cranberry Salsa

CRANBERRY SALSA

Recipe from "101+ Recipes from The Herb Lady"

INGREDIENTS


2 cups cranberries, cut in half or coarsely chopped
1/2 green pepper (if you want the bite use a jalapeno), minced
1/2 cup finely shredded cilantro, loose packed
1/4 - 1/2 cup orange juice
1-3 tablespoons honey
Optional: 1 clove garlic pressed or minced (yes garlic - it goes exceptionally well with fruit)
1/4 cup minced sweet onion or scallion
Salt to taste
 


 


 

 DIRECTIONS

Mix all ingredients together.  Chill at least 1-2 hours before serving.  This kind of fruit salsa can be mixed with yogurt to make a creamy dip.
 Serve with chips, cucumber slices, or simply as a side. Can also be used to coat a roast.
